Warming Vegetable and Lentil Daal

Ingredients

Serves 6

  • 2 cups of red lentils

  • Half a cauliflower, chopped into small florets

  • 2 peppers, roughly chopped

  • 2 big handfuls of spinach

  • 2 shallots, diced

  • Big pinch of cayenne pepper

  • 1 tsp grated ginger

  • 1 garlic clove

  • Juice of 1 lemon

  • 2 tbsp curry powder

  • 2 tbsp Turmeric

  • 2 tbsp Cumin

  • 6 cups of water

  • 1 tbsp maple syrup

  • 2 tbsp tomato puree

  • Salt and pepper

  • Rice

  • Fresh Coriander

Method

Put all the ingredients in a cooking pot apart from the spinach, bring to the boil then place a lid on it and turn down to a simmer for 30 minutes, stirring occasionally. Add the spinach just before serving with rice and fresh coriander.
