Chia Overnight Oats

This is my new favourite breakfast now it’s a bit warmer. It’s great because you can make a batch up for a few days, store it in the fridge and just grab and go each morning, so it’s very quick and easy. I’ve topped mine here with smooth peanut butter and warmed frozen summer berries but I have put some options for alternatives for you below if you don’t have these. I always keep some frozen berries in the freezer for recipes like this I love the big bags you can get in the freezer section of the supermarket of mixed summer fruits, just put a handful in a pan with a little dribble of water and heat through then pour over the top.

Ingredients

Base - Serves 2-3

  • 100g jumbo oats

  • 25g chia seeds

  • 300ml unsweetened almond milk (any other milk will work here too)

  • 1 tsp vanilla extract

Toppings (quantities below are for 1 topping)

  • 1 tbsp nut butter (I like peanut but any other nut butter will work or if you don’t have nut butter then top with a palm sized portion of nuts/seeds - this is important for extra protein and healthy fats to help keep us full until lunch)

  • Handful of berries

Method

  1. Put oats, chia seeds, milk and vanilla extract in a bowl, cover and soak overnight in the fridge.

  2. Spoon 1/3 or 1/2 of the mixture out in the morning (depending on how hungry you are) and add toppings.
