Smoked salmon on toast with cucumber, pesto mayo and salad
Ingredients (serves 1)
1-2 slices of gluten free bread
60g/2 slices of smoked salmon (any other smoked fish would work well here like mackerel etc)
1 tsp mayonnaise
1 tsp pesto (I used my homemade pesto - recipe here)
5-6 slices of cucumber
Handful of mixed salad
1 celery stick (or other salad accompaniment - whatever you have in the fridge)
Pepper
Squeeze of lemon juice (optional)
Balsamic glaze (optional)
Method
Toast the bread. Combine mayo and pesto then spread on the toast. Assemble smoked salmon and cucumber on the top. Season with pepper and squeeze some lemon juice over the top if you like. Serve with a side salad and drizzled with balsamic glaze (optional).
